A boozy Chilean ice-cream float: sweet young white wine poured over pineapple ice cream, deceptively easy to drink.

How to Make It

  1. Drop a generous scoop of pineapple ice cream into a large chilled glass.
  2. Pour the cold pipeño over the ice cream until the glass is nearly full.
  3. Drizzle the grenadine on top.
  4. Serve at once with a spoon and a straw, before the ice cream melts.

The Story

It is said to have appeared in Santiago's old taverns late in the 20th century, its name a joke about the unsteady legs it leaves behind; today it is a fixture of Chile's national holiday celebrations.
