Peruvian pisco, lime and egg white shaken into a frothy, bittered sour.

How to Make It

  1. Dry-shake pisco, lime, syrup and egg white without ice.
  2. Add ice and shake again until cold.
  3. Strain into a coupe.
  4. Dot the foam with Angostura bitters.
