How to Make It

  1. Halve the calamansi and squeeze them, keeping the seeds out.
  2. Stir the juice together with the simple syrup until it dissolves.
  3. Add the cold water and taste, adjusting the sugar to the sourness of the fruit.
  4. Pour into a tall glass full of ice and drop in a couple of squeezed calamansi halves.
