Before you cook

Mirepoix is a reference, not a supervisor. Temperatures and times are written for a normal domestic hob and they are a starting point, not a guarantee — your pan, your heat and your ingredients differ. Some sauces contain raw or barely cooked egg and are marked as such; they are not suitable during pregnancy, for young children or for anyone immunocompromised. Check allergens yourself.

Where the recipes come from

The facts — ratios, sequences, the classical names — are drawn from the public-domain French culinary canon, chiefly Escoffier’s 1907 A Guide to Modern Cookery. Every line of prose in the app is written for this app; nothing is copied.
