A cold, lightly salted yogurt drink whipped until a thick cap of foam sits on top — Turkey's standing answer to a hot day and a plate of kebab.

How to Make It

  1. Whisk the yogurt with a splash of the water until completely smooth and lump-free.
  2. Add the rest of the water and the salt, then whisk hard — or shake with ice — until a thick foam builds.
  3. Pour into a chilled glass and spoon the foam on top.
  4. Dust with dried mint if you like and drink at once, while the foam still holds.
